Summer holidays Closure 2018

We close at 16:00 on the 16th and will re-open on Wednesday the 1st of August, The staff will be away for their annual summer holidays, and We will be doing some refurbishments in the Riad and garden.

From tomorrow, We re-commence opening at our regular timings, 13h00 to 17h00 for lunch, 17h00 to 18h00 drinks and desserts, 18h00 to 21h30 for dinner.

Ramadan Kareem, During the holy month of ramadan, We will be open for lunch from 13:00 to 18:00, then garden is open for tea & coffee but kitchen is closed, and re-opens at 20:00 after fetour. 🥐🥛 🌙

Bessara - lets talk about Broad bean (Fava) soup - this morning is cold and bright, still no rain in Fez. 400 g dried split broad beans. soaked in warm water overnight, drain soaking water into a jug, measure and add more water to make up to 2 litres. pour over beans in a pressure cooker (6 l capacity or larger) add half a large head of garlic, cloves peeled and crushed, add a good glug of nice olive oil. Close the lid and cook for 30 minutes, turn off heat, allow pressure to escape, open and stir, boil and stuff, any bean pieces can be pushed through a sieve (do not blend, you will spoil the texture) Depending on the beans you may need to boil uncovered for another 10 minutes to thicken. At this point add salt to taste. Once smooth eat with bread, more fresh oil and a sprinkle of powdered cumin and cayenne pepper. serves 6 ish. To re-heat add a little more water and stir, the soup will set like a pate maybe serve cold with toast and lemon wedges? #vegan #fez #morocco (at فاس مدينة الملوك)

SUMMER HOLIDAYS & REFURBISHMENT

We close at 1600 on Tuesday 11 July and will re-open at 18.00 on Thursday 27 July.   The staff will be away for their annual summer holidays. If you are in Fez though between those dates Mehdi or I will be in the garden renovating and re-planting, do come for a chat and see what we are up to.  Though there will be no kitchen or drinks dispense.
