☽ Lavender Cake and Glaze
A special recipe for all of you, as this recipe is my significant other’s favorite for me to make and fairly simple for the budding kitchen witch. I hope you enjoy, and I appreciate every last one of you.
Ingredients:
Cake -
¾ c milk
3 tbsp finely chopped culinary lavender
6 tbsp softened butter
1 c white sugar
2 eggs
2 c all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
Glaze-
½ c milk
1 tbsp dried lavender buds
1 c confectioner’s sugar
To Begin:
Cake -
Preheat the oven to 325ᵒ F and grease/flour a 9 x 5 loaf pan.
Combine the milk and lavender in a small saucepan over medium heat; heat to a simmer, then remove from the heat and allow to cool slightly In a medium bowl, cream together the butter and sugar until smooth. Beat in the egg until the mixture is light and fluffy.
Combine the flour, baking powder and salt and stir into the creamed mixture alternatively with the lavender milk until just blended. Pour into the prepared pan.
Bake for 50 minutes or until a wooden pick inserted into the crown of the loaf comes out clean; cool in the pan and/or on a wire rack
Glaze -
Place the milk in a saucepan over medium heat; when it starts to boil, remove the pan from the heat and add dried lavender buds.
Let the mixture steep for 5 to 8 minutes, then strain. Whisk it into the sugar one tablespoon at a time until it is smooth and opaque
Pour or spoon onto the cooled loaf
