soy milk and whole wheat toast with strawberries, blueberries, pecans, walnuts, and cashews with cinnamon sprinkled on top~
CHILLI CON CARNE RECIPE
I LOVE cooking, but I HATE cleaning - this recipe was made for 4 adults, with plenty left over!
Ingredients:
1 tsp of Coconut Oil
2 Onions
8 Cloves of Garlic
2kg of Mince
2 cans of Kidney Beans
2 large Red Capsicums
8 Tomatoes
4 Red Chillies
2 cups of Water
2 bags of Baby Spinach Leaves
3 tsp of salt
2 tsp of chilli powder
2 tsp chilli flakes
2 tsp of turmeric
4 tsp of cumin
1 tsp of cinnamon
2 tsp of Oregano
2 tsp of chopped Coriander
Feel free to alter or adjust anything to suit your taste!
Instructions:
pre-chop your onions, garlic, chillies, capsicum, coriander
add oil to pot
cook onion and garlic until brown
add mince meat
add in all your herbs, spices and seasoning!
once meat is brow, throw in the kidney beans
add the tomatoes, capsicum, chillies and 2 cups of water
stir together and put the lid on and let simmer
add your spinach and let it cook until you are happy with the consistency
enjoy the delicious and healthy meal you just made; filled with protein, veggies, herbs and spices :)
Serving suggestions
Use Turkey or Chicken mince for a healthier alternative to red meat
I LOVE spicy food don’t be shy with the spices! They are full of healthy properties, great for your metabolism - healthy food does not have to taste boring!
Experiemnt with different types of legumes, beans, veggies, etc. (Mushrooms would taste lovely in this!)
Use more chilli powder in replacement for some salt so you aren’t compromising flavour (if that’s what you like, you can try more garlic and herbs if spice/ heat isn’t your thing)
Minimise the sodium you ingest. Try using natural Sea Salt instead of regular salt
Serve with some homemade avocado dip / guacamole / greek yoghurt / sour cream / parmasen cheese / whatever you want!

Blueberry Pancakes
Ingredients
Serves: 12
2 large eggs, separated
5 tablespoons milk
100g (4 oz) self raising flour
4 tablespoons caster sugar
pinch salt
100g (4 oz) blueberries
1 tablespoon vegetable oil
Preparation method
Prep: 10 mins | Cook: 10 mins

Place the egg yolks and milk in a medium bowl and mix thoroughly. Sift over the flour, caster sugar and salt and combine well.
2.
Whisk the egg whites in a glass or metallic bowl until they form soft peaks, then fold into the flour mixture gently. Carefully fold in the blueberries.
3.
Heat the oil in a frying pan over medium high heat. Drop 2 tablespoons of the mixture into the pan for each pancake, and cook for 2 minutes or until golden brown. Flip and cook for a further minute on the other side.
