why are all planetary bodies spherical?
Two part answer:
1) gravity. When you have a big enough object that it manages to clear its orbit around the sun, it will also be big enough to become (approximately) spherical due to the gravitational forces
2) they aren’t. Earth, for example, is geoid shaped, with bulges and depressions, while the giant gas planets like saturn are “squished”.
Saturn, in particular, has a difference around 10% between the radius of its equator and poles, which you can sort of see in this picture taken by Voyager 2:
