I just figured out something you can do with the carpet.
Since you can place it on top of dispensers, you could hide arrow traps underneath floors!
No one would be able to see it coming.

Horses are confirmed as awesome and lots of fun. They're really fast and really cool. Also carpet blocks are very nifty, and will definitely be a useful decoration.
The new launcher allows you to try out the snapshot without having to change your version, as it's separate from the current launcher, so just use the new launcher to play the snapshot, then use the regular one when you want to play 1.5.1 again.
