Ingredients: 2 cups of mixed greens. 1/2 cup of cherry tomatoes, halved. 1/2 cup of cucumber, diced. 1/4 cup of red bell pepper, sliced. 1/4 cup of carrots, shredded. 1/4 cup of broccoli florets. 1/4 cup of cauliflower florets. 1/4 cup of chickpeas, drained and rinsed. 2 tablespoons of balsamic vinaigrette dressing. Salt and pepper to taste. 1/4 cup of feta cheese optional.
Instructions: To make a salad, put mixed greens, cherry tomatoes, cucumber, red bell pepper, carrots, broccoli, cauliflower, and chickpeas in a large bowl. Pour the balsamic vinaigrette dressing over the salad and toss it around to cover everything. Add pepper and salt to taste.
