Ingredients: 4 cups corn kernels fresh or frozen. 1 cup diced potatoes. 1/2 cup diced onions. 1/2 cup diced carrots. 4 cups vegetable broth. 1 cup milk. 3 tablespoons all-purpose flour. 2 tablespoons butter. 1 teaspoon garlic powder. 1/2 teaspoon thyme. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Melt the butter in a big pot over medium-low heat. Put in the potatoes, onions, and carrots. Cook the vegetables until they get a little softer. Put some flour on top of the vegetables and mix them together. Cook for two more minutes. Slowly whisk in the vegetable broth, making sure there are no lumps. Sprinkle thyme, salt, and pepper on top. Add the corn. Bring to a low boil, then cook for 15 minutes or until the vegetables are soft. Add the milk and stir it in. Let it cook for another 5 minutes. Make the seasonings taste better.
