Ingredients: 1 cup gluten-free flour blend. 1/2 cup unsalted butter, cold and cubed. 1/4 cup fruit preserves e.g., raspberry, strawberry, apricot.
Instructions: Preheat your oven to 375F 190C. In a mixing bowl, combine the gluten-free flour blend and cubed cold butter. Use a pastry cutter or fork to cut the butter into the flour until it resembles coarse crumbs. Slowly add ice water, a tablespoon at a time, until the dough comes together. Divide the dough into equal portions and roll each portion into a ball. Flatten each ball into a disc and roll out on a lightly floured surface into a circle, about 1/8 inch thick. Spread fruit preserves on one half of each circle, leaving a small border around the edges. Fold the other half of the dough over the filling to create a half-moon shape. Press the edges together firmly and crimp with a fork to seal. Place the hand pies on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until golden brown.
