I can write an epistle on how much I love food, but today we are going to focus on ensuring your catering does not go pear shaped.
Once you’ve picked your caterer, agreed on the pricing, settled your meal plan and all the fine nitty gritty stuff. You need to note the following :
Over Burdening the Caterer
For the love of God… Never let an over ambitious caterer convince you that he/she can do more than provide food for the wedding for example one person providing the cake, deserts, small chops and food ….That’s a disaster waiting to happen . Confirm if he/she is outsourcing some of the work, if you find out otherwise please restrict the person to one aspect.
Nigerian caterers can convince you that their food is the next best thing to manna from heaven. Instead of agreeing to only a small scale tasting of your menu, attend an event where the caterer is the main food vendor, there you can gauge customer service, delivery, and most importantly taste. It’s easy to bamboozle clients with an in house/small scale tasting. Also, no matter how rich the couple are or how well planned the wedding is, there is always reports of one or two people who were not served food at a wedding reception. This is very avoidable #shineyoureyes. MOST IMPORTANTLY HAVE A BACK UP CATERER YOUR IN-LAWS WILL THANK YOU FOR THIS.
Delegate, delegate and delegate more
To ensure proper distribution of food, there are many family members and friends willing to help out during a wedding so put as many of them as you need to work if you’re catering your own wedding. There should be people showing guests where to sit,others in charge of serving the wedding food and distribution of souvenirs etc. If you can’t hire professional ushers, make sure the family/friends you put in charge of sharing the food are not the greedy type who are more interested in what they can take home than the satisfaction of your guests.
Spacing and Distribution (Again)
The usual serving structure for most Nigerian events starts with small chops followed by the main course, then dessert and the all-important GRILLS/BARBECUE. For the love of God, if you don’t want people to exchange words and blows, caterer has fed everyone before the grills come out. If not, #problemdey.

Nigerians have a way of taking the idea of #manknowman to another level and I find it downright annoying. If you’re on a budget and are serving alcohol to a select few, please ensure you have a special delegate/vendor for that purpose. It’s disgraceful when you see a vendor serving just the grooms/brides side drinks because they have been instructed by some self-serving individual to cater to a select few. If this is the plan, please do not invite a massive crowd to your event keep it nice and small.
