#sugarfreesmoothie with sweet potato is on on the menu today including my gut friendly granola. 1/2 a cup of cooked/cooled sweet potato 1 smallish Lebanese cucumber 3/4 cup of homemade almond milk 1/2 a whole vanilla bean 2 handfuls of fresh spinach Blend till smooth and add to a mason jar (if you are transporting this smoothie - like me to work - make sure it has a lid. Top with granola (my recipe next time) and a blob of coconut yoghurt. I overfilled mine so my photo looked nicer, but in the real world don't as it will spill over it you can't get the lid on it! The addition of the topping means you get mouthfuls of smoothie you need to chew, which is good to slow down its consumption and it's yummy! If you are not doing a sugar/grain free thing then use any granola or yoghurt and swap the cucumber for a lovely ripe pear or banana 😊 #8weekghp #8weekghpsmoothie
