The Doves you release in the game can be found around the entrance of the new areas. I couldn't find the other two sadly...
First Dove Before Entering the Basilica
Second Dove Entrance of the Sunken Cathedral
Third Dove Entrance of the Severed Tower
Fourth Dove Fountain inside the Two Moon's arena
Last Dove Crimson Rains above the Head of Medardo

The Doves fly away after the first encounter so you'll be sure to miss them out if you pass by too fast.
