After Tennis Treat A change of court venue for weekend tennis puts Uncle nearer to Sim’s Kitchen in Hillsborough. The Hainanese Chicken doesn’t disappoint and today’s special is Penang Lobak, a Nyonya deep fried pork/chicken roll wrapped in tofu skin, made distinctive in flavour with the use of Ngoh Hiang Hu’on (5-spice). Owners Uncle Jack and Aunty Doris explained the Penang take on their Lobak where the meat filling is not minced. After tennis brunch. Sometimes Uncle has to rush to Kohimarama for early morning tennis. It’s not good to play on an empty stomach.
