With a hubby who works late, the kids and I are alone at home on most evenings. I would always ask the girls to help me look after the baby brother when I am going to cook. Some days it's hard because he would be banging on my kitchen door and crying like it's the end of the world, but some days we just manage to do it without too much cries or whines. This evening was an in between kind of situation but thankfully I had prepared the soup in the afternoon and the rest of the dishes didn't take too long. Tonight's dinner was stir-fried beef with ginger and spring onions, steamed golden promfret in teochew style and the kids's favourite ABC soup (cooked with a whole chicken and added in corn too because we love corn!). We had a hearty dinner and I was looking forward to surprising the hubby thinking that he would be coming home late, only to have him text at the last minute that he would not be returning tonight. *sob* yup, it happens. But hey, good news is the kids and I have our lunch settled for tomorrow. Yippee yay! P.S. I always cook a huge pot of soup because not only do we love soup, I also like to leave some for the next day. Makes things much easier when I can just whip up noodle or macaroni soup in a matter of minutes. The girls finished five bowls of this soup just tonight alone! P.P.S. No, I don't always manage to cook dinner.
