Without any grains or refined sugar, these Glazed Grain-Free Choux Pastry Donuts are a tasty paleo-friendly treat that will fulfill your cravings. They have a crispy exterior, a light and airy interior, and are covered in a sweet glaze and a dark chocolate drizzle.
Ingredients: 1 cup almond flour. 1/4 cup tapioca flour. 1/2 cup water. 1/4 cup ghee or coconut oil. 1/4 teaspoon salt. 3 large eggs. 1 tablespoon honey or maple syrup. 1 teaspoon vanilla extract. 1/2 cup coconut sugar. 1 tablespoon coconut milk. 1/4 cup dark chocolate chips or chunks. Coconut oil or ghee for frying.
Instructions: In a saucepan, combine water, ghee or coconut oil, salt, and honey or maple syrup. Bring to a boil. Reduce heat to low, add almond flour and tapioca flour. Stir constantly until the mixture forms a dough and pulls away from the sides of the pan. Transfer the dough to a mixing bowl and let it cool slightly. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract. Heat coconut oil or ghee in a skillet over medium heat. Spoon the dough into a piping bag fitted with a large round tip. Pipe the dough into small circles in the hot oil. Fry until golden brown, flipping once, about 2-3 minutes per side. Remove from oil and place on a paper towel-lined plate to drain excess oil. In a small saucepan, combine coconut sugar and coconut milk. Heat over medium heat, stirring constantly until sugar is dissolved and mixture is smooth. Dip each donut into the glaze, then place on a wire rack to set. Melt dark chocolate in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth. Drizzle melted chocolate over the glazed donuts. Serve and enjoy!
