The Dish On: Boltwood
Welcome back to our blog series, “The Dish On”! Explore our restaurant participants and sponsors, meet the chefs, and whet your appetite for à la carte 2017! This week, #TheDishOn celebrates a new participant, Boltwood. We are thrilled to have this farm-to-table American fare restaurant located in Evanston as an official participant of the à la carte 2017 French Food Festival.
The menu of Boltwood restaurant in Evanston, Illinois is new each day and reflects the careful craft of French cuisine, with their curated drink selection and emphasis on community as a part of every meal. The team at Boltwood is ready to bring you a unique and quality dining experience that you will never forget.
The chef and owner, Brian Huston, is a native of Evanston and got his start in the food industry under Paul Kahan, chef and owner of The Publican, Blackbird and Avec where Huston received his training. Kaham named Huston the Chef de Cuisine at The Publican where he “helped define Farm-to-Table cooking in the Midwest.” The result of this experience was the realization of Huston’s dreams in the creation of Boltwood- a restaurant that’s accessible to both family and friends, for any occasion. Huston runs the place alongside his wife, Chrissy Prieto who brings “boundless energy and quest for perfection” to the restaurant.
Boltwood received its name from the freshman wing of Evanston Township High School, Huston’s alma mater. It symbolizes the fresh beginning and energy that is packed into this intimate restaurant. We are excited to have Boltwood as a participant this year! Be sure to stop by Boltwood during à la carte 2017 French Food Festival and have some Moules Marinières for lunch!
