Ingredients: 2 chicken breasts, diced. 2 cups broccoli florets. 1 cup heavy cream. 1/2 cup grated Parmesan cheese. 2 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste. 8 oz fettuccine pasta.
Instructions: Heat olive oil in a large skillet over medium heat. Add diced chicken breasts and cook until browned and cooked through, about 5-6 minutes per side. Remove chicken from skillet and set aside. In the same skillet, add minced garlic and saut for 1-2 minutes until fragrant. Add broccoli florets to the skillet and saut for 3-4 minutes until slightly tender. Meanwhile, cook fettuccine pasta according to package instructions until al dente. Drain and set aside. Return cooked chicken to the skillet with broccoli. Pour in heavy cream and grated Parmesan cheese, stirring until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste. Add cooked fettuccine pasta to the skillet, tossing until well coated in the creamy sauce. Serve hot, garnished with additional Parmesan cheese if desired.
