Ingredients: 1 cup almonds. 1 cup pitted dates. 2 tablespoons unsweetened shredded coconut. 1 tablespoon coconut oil. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: Pulse almonds in a food processor until they are very small. Add salt, dates, coconut shreds, coconut oil, and vanilla extract. Mixture will come together after being pulsed. Use your hands to form the mixture into small balls. If you want, you can coat the balls with more shredded coconut. Put in the fridge for at least 30 minutes to get firm before serving.
