Aloo Posto (Potatoes with Poppy Seeds)

Aloo posto is a very traditional and humble Bengali dish which goes very well with a bowl of hot steamed rice. Try it out to be transported to a nice sunny Sunday lunch in Kolkata. 

Ingredients:  2-3 medium sized potatoes 50 g of poppy seeds 2tbsps of mustard oil Half a tsp of kaalonji (nigella seeds) 2 dried red chillies 2 green chillies 1-2 tsps of salt 1 tsp of sugar

Process:  1. Soak the poppy seeds in water for 2-3 hours and then strain the water and add the soaked seeds to a mixer grinder jar, along with 2 green chillies and half a cup of water. Now keep aside.  2. Peel and cut the potatoes into small cubes. 3. Take a frying pan, add 2tbsps of mustard oil. Then add the dried red chillies and kaalonji. Once they start spluttering, add the potato cubes and fry for around 6-7 minutes.  4. Now add in the poppy-seed paste, along with salt and sugar into the pan. Cook until the raw smell of poppy paste goes away. Continue cooking until the potatoes are soft (can cover the pan with a lid and add a splash of hot water to ensure the potatoes don't stick to the pan and get cooked well). 5. Remove from heat and serve hot with steamed rice. 

PS: Please check the salt before removing from heat and modify as required as per individual taste.
