Sweet potato french fries; a guilt-free healthy twist to our American Fries!

Serves 2-3 people
To PREP: You will need...
one large sweet potato – washed and dry, sea salt (coarse), freshly ground black pepper (optional: Cajun and Rosemary), good quality olive oil, a peeler, a sharp chef’s knife, a cutting board, a large baking sheet
Preheat oven to 450 degrees
1. Peel the potato
2. Slice the sweet potato into thick slices (1/2 to 3/4 inch)
3. Put the fries on the baking sheet
4. Sprinkle a good pinch of sea salt over them, and then apply a ton of freshly ground black pepper.
5. Drizzle with olive oil
6. Mix it all together on the baking sheet.
( Make sure the fries are evenly spaced and not touching so they don’t get soggy! )
Put them in the oven for 15 minutes. Then, take them out and flip them. Once they’re flipped, put them back in the oven for 10 minutes.
My healthy friend Sally inspired me to post this recipe. My fiance and I make these all the time. We like to cut them into chips (circles) and we add cajun! We make a recipe we invented called Sweet Potato Turkey Hash and pair them with egg whites, chopped onions, and yellow pepper slices. Hows that for breakfast for dinner?
