Years ago, in my piano bar days, I had a friend who was a line producer on Flay's first Food Network show. He reported that Flay was actually not a very good cook, and was terrible to his sous chefs, constantly screaming and berating them. He's okay as an executive chef - he apparently has a decent palate in his chosen cuisines - but not a particularly talented COOK.
That squares with what I’ve heard of him, yes. Which sort of makes sense, generally the kind of chef who can build a menu and self-market will have the form of success he’s had. But also that’s not someone who works physically well under pressure, always.

eek! How to you get the potatoes to freeze without going grainy? I have tried it witha beef roast with trimmings, and potatofail!
I don’t know I’ve ever had them go grainy! But I’ve never frozen roast potatoes of the normal kind. The only potatoes I freeze are fried, mashed, or these parboiled roast potatoes, and they do fine. Or maybe I just never noticed?

LOL! It’s the Goodwill in the Fulton Market area, a few blocks east of the Randolph Street Market -- I want to say it’s on Racine. That place is a madhouse on weekends.
