My current diet* is super narrow and restrictive and it basically forces me to cook every single one of my meals which shouldn't be a big deal, I realize, but all take-out and convenience foods are pretty much out, like I can't even just make myself a little sandwich, and honestly it's exhausting.
Today I got home late again from work and was feeling pretty glum and uninspired about having to figure out yet another meal. But I dug deep and I did it, and as I was having it, I was enjoying it more than I expected. It was just a salad with salmon, but considering how little options I have, it was well-seasoned, interesting and tasty. I think I've actually become a pretty good cook, all things considered.
So even though this diet is hard, I'm doing it, and I'm okay, and I'll be okay until the situation is resolved.
*to be clear this is a diet driven by a medical condition, not a crash weight loss diet or anything
