Ok my official cookie post. They’re complicated in the sense that you need to buy stuff you aren’t going to have in your kitchen and will need to dedicate some time to cuz theres prep work involved. But i promise its worth it.
The cookie is a brown butter base with Toffee, Blonde Chocolate, and Dark chocolate. “Wow won’t that be too sweet” no, not if you get 60% or darker like so ⬇️
Everything balances out if yoy do it right!
Ok the things you should make FIRST
Blonde Chocolate
this is more of a uk thing i think cuz ive never heard of it but its SOOOOO GOOD!!!! Here are the instructions and the chocolate I use, i get two (2) of these bars and chop them up real tiny. Id say it takes 30 mins to get the right color (stiring every 10 ofc ofc)
Make sure its smooth and not lumpy. I spread it on parchment paper and freeze it for like 10 mins before chopping it back up.
Toffee
Either be lazy and buy the heath bits in the bag or use this recipe. If u dont have a candy thermometer just get the heath bits.
I use this recipe for Toffee (ignore the cookie recipe just make the toffee)

You can make all of this when you brown the butter if u want usually I do this and stick everything in the freezer and then make the cookie base. The toffee takes like 15 mins to set in the freezer and i break it with a rolling pin. I mix the toppings together into one bowl and set a side, i use the whole thing.

MAKE THE BROWN BUTTER 1-2 HOURS BEFORE MAKING THE COOKIES!!!! Let it sit ON THE COUNTER to cool. This way when you re-heat it you don’t make it too hot and cook the eggs. Microwave it for 30 seconds and just stir until its all melted.
I usually portion out the cookies to be 45 grams each, that way you get about 24 decently sized cookies. I do recommend refrigerating the dough overnight but tbh I dont sometimes and they still turn out good.
To get them circular I take a large cup and swish them around for a second after being fresh out the oven. I top w flaky seasalt that part is important

As a bonus I also made
- twice baked Almond Crossiants with dark chocolate
- dark chocolate marshmallow muffins with a fudge center
- (not pictured) choco mint brownies
It was a kinda knee jerk decision fueled by me getting my first adult check and watching others on youtube do it. I started the process on Friday (12/19) and finished on monday (12/22) well, more like tuesday morning at 3 am but whose counting.
I portioned it out accordingly and gave it to my co-workers and former gap co-workers! Everyone liked the pastries best, the almond croissant was the biggest hit I’d say. For the cookies the salty one was mentioned alot, but people were a fan of the brown butter snickerdoodle too.
I would say this was really fun and definitely want to do it again next year. I wouldn’t exactly call this a cost effective Christmas gift, but it was definitely a great way to give a meaningful gift for a large group of people.
Next year I plan on getting more creative with it for sure :D!
