Autumn isn't my favorite season, to tell the truth. I prefer spring. This is because we have very short spring and summer where I live. And I always crave more warmth and light. But September and early October are some of my favorites. And it's all because of the apple harvest.
I received a whole basket of Antonovka apples, and that can mean only one thing — I'm going to bake my favorite apple pie!
For me, it's already a sacred ritual to bake this incredibly fragrant pie on cold autumn evenings. Actually, this is the first dessert I learned to make way back in childhood. The very first time was under my mom's watchful guidance, and since then I haven't broken the tradition and bake it myself every year.
For some reason, the pie turns out the most delicious precisely in autumn. That taste… that aroma… and the crispy crust. Mmmmm. And yes — it turns out most delicious with Antonovka apples, with their special tartness and aroma. With sweet apples — it's just not the same!
📝 The Recipe: My Simple Sharlotka
Ingredients:
· 4 eggs · 200g sugar · 200g flour · 1 tsp baking powder · 4 medium apples (Antonovka are the best!) · A pinch of cinnamon (optional, but highly recommended!)
Instructions:
Preheat your oven to 180°C (350°F).
Wash the apples, remove the cores, and cut them into slices or chunks.
In a bowl, beat the eggs with the sugar until the mixture is light and fluffy.
Gently fold in the flour and baking powder until just combined. The batter will be thick and smooth.
Place the apple pieces into a greased or parchment-lined baking pan. (For extra coziness, you can sprinkle them with a little cinnamon at this step!).
Pour the batter over the apples, spreading it evenly to cover them.
Bake for 40-50 minutes, or until the top is a beautiful golden brown and a toothpick inserted into the center comes out clean.
Let it cool a little before slicing… if you can resist the aroma!
