When I get stressed out, I bake. And then I eat the whole thing.
1 teaspoon vanilla extract
1 large apple, preferably tart, chopped
1/4 cup almond milk (OPTIONAL)
2 tablespoons cold butter
(I completely did not follow any of the instructions in the recipe, and it turned out great, so here is what I did).
Preheat oven to 350 degrees.
Combine all dry: flour, baking soda, baking powder and sugar. Mix well.
Add oil, egg, vanilla and sour cream. Mix well.
At this point, my batter was very dry, so added that almond milk so make it moister. If your batter is not dry, don't add it.
Add chopped apples. Mix very, very well and transfer to baking dish.
For topping, combine sugar, butter and cinnamon. Use your hands to combine everything well (especially breaking the butter up). Add topping to the top, duh.
Bake for 35-40 minutes. To see if done, insert toothpick in the middle of the cake. If it comes out clean, it is done.
LET COOL COMPLETELY, then eat. I know, I know. It sucks to wait, but it is very worth it.
