Ingredients: 2 lbs pork loin, boneless. 4 apples, cored and sliced. 4 potatoes, peeled and cubed. 4 carrots, peeled and sliced. 1/4 cup olive oil. 2 tablespoons Dijon mustard. 2 tablespoons honey. 2 cloves garlic, minced. 1 teaspoon dried thyme. Salt and black pepper to taste.
Instructions: Preheat your oven to 375F 190C. In a small bowl, whisk together olive oil, Dijon mustard, honey, minced garlic, dried thyme, salt, and black pepper.
