Ingredients: 150g almond meal. 150g powdered sugar. 2 large egg whites. 50g granulated sugar. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp salt. 1/2 tsp vanilla extract. For the salted caramel filling:. 150g granulated sugar. 90ml heavy cream. 50g unsalted butter. 1/2 tsp sea salt flakes.
Instructions: Turn the oven on to 300 degrees Fahrenheit 150 degrees Celsius and place parchment paper on a baking sheet. Put the spices, powdered sugar, and almond meal in a food processor. Pulse until thoroughly mixed. Whisk the egg whites in a different bowl until frothy. Add the granulated sugar gradually while beating until stiff peaks form. To make a smooth batter, fold the almond meal mixture into the beaten egg whites. To keep the texture airy, use gentleness. Pour the batter into a piping bag that has a round tip on it. Using a pastry bag, pipe tiny rounds onto the baking sheet and space them apart. To get rid of air bubbles, lightly tap the baking sheet against the counter. To form a skin, let the macarons sit at room temperature for approximately half an hour. Bake for 15 to 18 minutes, or until the macarons are set and have formed feet, in a preheated oven. Take out of the oven and allow to cool fully. Make the salted caramel filling while the macarons are cooling. Melt the powdered sugar in a saucepan over medium heat, stirring constantly, until the mixture turns amber in color. Take off the heat and stir in the heavy cream very carefully. It could splatter, so use caution. Add the sea salt flakes and unsalted butter, stirring until smooth. Let the caramel filling cool and get a little thicker. Next, place one macaron shell on its flat side and pipe a small amount on top before sandwiching it with another. Continue with the remaining filling and macaron shells. To allow the flavors to meld together, place the macarons in an airtight container and refrigerate for at least 24 hours. Your Salted Caramel Spiced Apple Macarons are ready to be served. Enjoy!
