Notes apps welcome

My iPad deleted some of my notes yet again. This time I didn’t lose a list of books I want to read, but some vital information* instead.

Any recs for free note-taking apps are more than welcome. Evernote is not working well for me. I don't need something that will ask me to synch up every five seconds - sometimes there's no internet connection available. I just want something simple, a notepad that won’t magically delete my notes.
