Ingredients: 1 cup cornstarch. 3/4 cup all-purpose flour. 1 tsp baking powder. 1/4 tsp baking soda. 1/4 cup unsalted butter, softened. 1/3 cup granulated sugar. 2 large egg yolks. 1 tsp vanilla extract. 1/2 cup dulce de leche, for filling. Powdered sugar, for dusting.
Instructions: Mix the cornstarch, all-purpose flour, baking powder, and baking soda together in a bowl using a whisk. Melt the butter and mix it with the sugar in a different bowl until it is light and fluffy. Mix the egg yolks and vanilla extract into the butter mixture until everything is well mixed together. Add the dry ingredients to the wet ones one at a time and mix them together until a soft dough forms. Put the dough in the fridge for at least 30 minutes after making a disc out of it. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. To make the dough about 1/4 inch thick, roll it out on a lightly floured surface while it is still cold. Use a cookie cutter to make rounds, then put them on the baking sheet that has been prepared. The cookies should be baked for 10 to 12 minutes, or until the edges are just beginning to turn golden. On a wire rack, let the cookies cool all the way down. On the bottom of one cookie, spread a teaspoon of dulce de leche. Then, put another cookie in between them. Add powdered sugar to the alfajores that have been put together. Serve these tasty Argentine alfajores with dulce de leche and enjoy them!
