STA. CRUZ, MARINDUQUE—Arrowroot cookies or popularly known as ‘uraro’ is a favorite delicacy in Marinduque. It is made from arrowroot flour, sugar, eggs, and margarine.
A starch that can be obtained from rootstocks of several tropical plants, arrowroot, can be consumed in the form of biscuits, puddings, jellies, and cakes. The absence of gluten makes it useful as a replacement for wheat flour for bread-making.
One of the few companies that specialize in arrowroot foodstuff is Rejanos.
Rejano’s Arrowroot Cookies is a two-generation-old business of the Rejano family. It started as Rejano’s Bakery in 1946 by their grandfather Timoteo Castillo. Later on, Castillo’s adopted son Crisostomo Rejano (her father) took over the management of the bakery.
Mita Rejano Reyes, the current proprietor of Rejano’s Arrowroot Cookies, is the sixth of Rejano’s nine children. After graduating with a degree in chemistry, she decided to help her parents improve their business.
