Coconut rice with tofu strips
Wandering about in Asian town supermarkets is akin to a child walking into santa's grotto but for pretentious foodies... if you're not from those cultures obviously. We spend ages perusing and coming across weird plastic wrapped tubers or some unidentified animal trotters. Though eventually you find something which tickles your fancy or excites your spirit of discovery (or you load up on instant ramen meals for one). In this case we made a bowl of coconut rice, with some black tea tofu we found which we prepared in a homemade ssamnjang and tomato sauce, topped with a pre-bought mix of bonito and chilli flakes, toasted sesame seeds, and nori sprinkles!

This lunchbox meal was prepared by me and photographed by my husband before his lunch.
He often sends me a picture to let me know, “I’m having lunch now.”
Sometimes, though, he forgets and takes a few bites first, then remembers to snap a photo afterward.
In the picture, there are both Chinese-style stir-fried dishes and Thai favorites like Panang curry with chicken and crispy shrimp rolls.
My husband’s lunchboxes from the past weeks.
First day of the holiday— grateful for his quiet strength.
I see you, and I cherish you.
yummy for your tummy
