Pickle Engineers
Pickles are jewel of our nation. The art of preparing the pickles is an ancient procedure. It is part of the culture and history for more than 4,000 years. Our meal is incomplete without it. Indian cuisine is the best example for people who take food as their passion. When it comes to Indian food, nothing gives a homely feeling other than “achar / pachadi ”.
The delicate flavors of our rich spices is the gimmick of our pickles. The avakaya recipe is the king of Andhra pickles since ages. Avakaya is amalgamation of two different words. The word ava means the thick mustard paste and kaya is simply any raw fruit or vegetable. In this case, it is the bite- sized chunks of raw mango well coated and marinated in thick mustard paste and sesame or peanut oil with local and simple home pound aromatic spices giving unbeatable taste to the flesh inside with maximum shelf life.

A fine balance between sweet, hot, spice and tart. Yum!! I am not having any superlative degree to describe it. Every district has it’s own regional special , simple and seasonal achar. The pungent aroma would leave you mouthwatering and spellbound. We love to carry our trunk full of pickles when travelling. This humble, age old recipes are our ancestral wisdom to keep us alive even during the crisis. Its not just a flow of recipe but also needs dedication and tender love to prepare and care for it. We are full of emotions and so do our pickles.
The best part of pickle is it has nothing to do with economic status. If deep pockets enjoy it with biryani then the other might enjoy with it simple roti. Can be enjoyed by everyone. It is a mode to continue our culture to keep it alive for coming generations. Pickles keep us stuck to our roots. It reminds me of my summer vacations and my family. It has all the flavors which we have in our life. We have something for everyone. In fact, they say it was India which introduced pickles to the world. It stood as a means to survive during sea voyage and probably tradition of pickling may have also developed a solution for the hard times of food scarcity and seasonality of produce.
Who knew that simple fermentation of vegetables will be a topic to write someday ? Am sure each one of us have their own stories and importance of pickles in their lives like i had in my hostel days! Would you like to taste them too ?

COVID-19: Annual pickle-making rituals go awry due to lockdown

Summer heralds the beginning of the ritual of making pickles and vadiyalu (rice crackers) in most Telugu households. Often, families depend on one expert — a family friend or usually a close relative like the grandmother or elderly aunt — who helps out with sage advise on the preparations.
With the lockdown visits from these experts will have to be missed. Does that mean one has to…
