Egg Lemon Soup needin some classic comfy soup This soup is peak home style cooking for most Greeks and nourishes so deeply Greeks love making claim to this soup, amongst other divine creations, we are a proud people for sure, but the truth is this soup was brought to the Balkan Peninsula and Greece by Sephardic Jews hundreds of years ago. Bless them! So grateful ! the Avgolemonon style soup can also be made into a sauce that is often paired with Dolmathakia(sarmathakia) and other delicacies. Y’all this is my jam and i LOVE this so much. My remembrance of my Yiayia beating eggs and squeezing the lemons, as i could barely can see above the counter is some of my oldest memories. Together we will gather greens, lemons and herbs while we are in Greece this fall and we will definitely be making this soup together! A sweet little component of our Mushrooms and Culture of Greece trip in October, is our access to a lovely kitchen so I can share these recipes with y’all and we can cook and create together.
