On a toasted bagel, this dish combines the creamy texture of avocado with the richness of eggs to make a tasty and filling breakfast or brunch option.
Ingredients: 1 bagel, sliced. 1 ripe avocado. 2 eggs. Salt and pepper to taste. 1 tablespoon butter or olive oil.
Instructions: In a bowl, cut up the avocado and mash it. Make a hole in the middle of every bagel slice. In a nonstick skillet over medium heat, melt butter or olive oil. Put slices of bagel in the pan and crack an egg into each one. The egg whites should be set after two to three minutes of cooking, but the yolks should still be runny. On top of each bagel slice, put some mashed avocado. Add pepper and salt to taste. Enjoy while hot!
