This colorful avocado beet salad with citrus vinaigrette is both healthy and refreshing. The creamy avocados and earthy, sweet beets go well together. The citrus vinaigrette gives the salad a tangy and bright taste that makes it a great starter or side dish for any event.
Ingredients: 2 medium beets, roasted, peeled, and diced. 2 ripe avocados, peeled, pitted, and diced. 1 orange, segmented. 1/4 cup chopped fresh cilantro. 2 tablespoons olive oil. 2 tablespoons fresh lime juice. 1 tablespoon orange juice. 1 teaspoon agave syrup or maple syrup. Salt and pepper to taste. Mixed greens or arugula, for serving.
Instructions: In a large bowl, combine the diced roasted beets, diced avocados, orange segments, and chopped cilantro. In a small bowl, whisk together olive oil, lime juice, orange juice, agave syrup, salt, and pepper to make the citrus vinaigrette. Drizzle the citrus vinaigrette over the salad ingredients and gently toss to combine. Serve the avocado beet salad over a bed of mixed greens or arugula. Garnish with additional cilantro if desired.
