It is a very simple process
Press DIsplay/Back Button for 2 Seconds for Button/Dial Function Menu
Scroll Down the Menu to "AE-L" Setting Click the "Menu Ok" Button
Scroll down page and choose "AF-ON" click the "Menu Ok" button
Now your FujiFilm XT-2 Back Focus is enabled

I was shooting a wedding late last year and I had an assistant with me acting as a second shooter. As we were shooting the reception and all the awesome dancing I could tell she was getting frustrated. She was upset that she couldnt get the right focus on all the time and hold it for recomposing her shots after focus. I watched her take a couple shots and then I saw it... Simple really.
Like most newer photographers it takes some time to realize that every button on that giant camera has a function. One that I found early in my career was the back focus button or on my camera called the "AF-ON". This button fits perfectly for your thumb. This is beautiful... All you have to do is press that button to focus and use shutter button strictly as the shutter and take that picture. This will help with finger strain and let you take 3-4 quick shots without changing up your focus. Its the little things...
