Enjoy the rich flavors of the sea with this smooth seafood chowder. This chowder is the perfect comfort food because it has a lot of different kinds of seafood and hearty potatoes. When you add bacon, it makes the food taste even better and makes you want more.
Ingredients: 1 lb mixed seafood shrimp, scallops, fish. 3 slices bacon, diced. 1 onion, diced. 2 cloves garlic, minced. 3 potatoes, peeled and diced. 2 cups fish or seafood broth. 1 cup heavy cream. 1/2 cup milk. 2 tablespoons all-purpose flour. 2 tablespoons butter. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Diced bacon should be cooked in a big pot until it gets crispy. Take the bacon out of the pot and set it aside. Leave the fat in the pot. Dice the onion and mince the garlic and add them to the pot with the bacon fat. Cook the onions until they become clear. Put in the diced potatoes and cook for a few minutes. Add the whole-wheat flour and cook for one more minute. Slowly add fish or seafood broth while stirring all the time to keep lumps from forming. Put in the mixed seafood and bring it to a slow boil. Make sure the seafood is fully cooked. Add the heavy cream and milk and mix them together by stirring. Add pepper and salt to taste. Let the chowder simmer for 10 to 15 minutes, or until the potatoes are soft and the soup has thickened. Serve hot with chopped fresh parsley and crispy bacon bits on top.
