Ingredients: 4 medium-sized sweet potatoes, peeled and cut into 1-inch cubes. 8 slices of thick-cut bacon, chopped. 1/4 cup brown sugar. 2 tablespoons olive oil. 1 teaspoon smoked paprika. 1 teaspoon garlic powder. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: Turn on the oven and heat it up to 400F 200C. Add the sweet potato cubes to a large bowl. Add the olive oil, smoked paprika, garlic powder, salt, and pepper. Toss the potatoes until they are well covered. Spread the sweet potatoes out in a single layer on a baking sheet. Put the chopped bacon in the same bowl and sprinkle brown sugar over it. Put the bacon on top of the sweet potatoes on the baking sheet. Put the dish in an oven that has already been heated and roast it for 25 to 30 minutes, stirring it every so often, until the sweet potatoes are soft and the bacon is golden. Take it out of the oven and let it cool down for a while. Add fresh parsley as a garnish if you like. Serve hot as a tasty side dish for Thanksgiving!
