Ingredients: 1 lb pulled pork. 8 slices of bacon. 1 cup pineapple chunks. 1/2 cup diced red onion. 1/2 cup diced bell peppers any color. 1/4 cup BBQ sauce. 8 small taco tortillas. 1 cup shredded cheddar cheese. 1/4 cup chopped fresh cilantro. Salt and pepper to taste.
Instructions: Cook the bacon in a hot skillet over medium heat until it crisps up. After removing and letting it drain on paper towels, break it up into pieces. Add diced red onion and bell peppers to the same skillet. Saute for approximately five minutes, or until they are soft and beginning to caramelize. To the skillet, add the pulled pork and BBQ sauce. Cook for a further three to four minutes, stirring frequently, until thoroughly heated. Cook for a further two minutes, stirring occasionally, until the pineapple chunks are warmed through. Add salt and pepper to taste and season the mixture. Follow the directions on the package to reheat the taco tortillas in a different skillet or the microwave. Spoon the pulled pork and pineapple mixture onto each tortilla to assemble the tacos. Add chopped cilantro, shredded cheddar cheese, and crumbled bacon on top.
