Instructions: Preheat the oven to 375F. Toss the sliced potatoes with the oil, salt, and pepper in a large mixing bowl. Place the potatoes on a baking sheet in a single layer and bake for 20-25 minutes, or until golden brown and crispy. Remove from the oven and top with shredded cheese and bacon crumbles. Return to the oven for another 5 minutes, or until the cheese is melted and bubbly. Sour cream and chopped chives on top. Serve immediately.
