A delicious baked dish with artichokes and white beans enhanced with ricotta cheese and dressed up with olive oil infused with basil. A golden, cheesy crust is added by the Parmesan topping, making for a satisfying and flavorful bite.
Ingredients: 2 cans 15 oz each white beans, drained and rinsed. 1 can 14 oz artichoke hearts, drained and quartered. 1 cup ricotta cheese. 1/4 cup fresh basil leaves, chopped. 1/4 cup extra virgin olive oil. 2 cloves garlic, minced. Salt and black pepper to taste. 1/2 cup grated Parmesan cheese.
Instructions: Set the oven's temperature to 375F 190C. Add the chopped basil, ricotta cheese, artichoke hearts, and white beans to a mixing bowl. Heat the olive oil in a small saucepan over medium heat. Garlic powder should be added and sauted until aromatic. Drizzle the bean mixture with the garlic-infused olive oil and toss to coat evenly. To taste, add salt and black pepper for seasoning. Spoon the mixture into a baking dish, then top with grated Parmesan cheese. Bake for twenty to twenty-five minutes, or until the top is bubbly and golden. Before serving, take it out of the oven and allow it to cool for a few minutes. If desired, garnish with extra fresh basil and drizzle with more olive oil. Enjoy and warm up!
