With spiced gingerbread cookies and a creamy buttery filling, these Gingerbread Whoopie Pies are a delightful holiday treat. Ideal for sharing with family and friends!
Ingredients: For the cookies:. - 2 cups all-purpose flour. - 1 tsp baking soda. - 1/2 tsp ground cinnamon. - 1/2 tsp ground ginger. - 1/4 tsp ground cloves. - 1/4 tsp salt. - 1/2 cup unsalted butter, softened. - 1/2 cup brown sugar. - 1 large egg. - 1/2 cup molasses. - 1/2 tsp vanilla extract. - 1/4 cup buttermilk. For the filling:. - 1/2 cup unsalted butter, softened. - 2 cups powdered sugar. - 1 tsp vanilla extract. - 1-2 tbsp milk.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. In another bowl, cream the butter and brown sugar until light and fluffy. Beat in the egg, molasses, and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Mix until just combined. Drop spoonfuls of batter onto the prepared baking sheet, spacing them apart. Bake for 10-12 minutes or until the cookies spring back when touched lightly. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. For the filling, beat the softened butter until creamy. Gradually add the powdered sugar and continue to beat until well mixed. Stir in the vanilla extract. If the filling is too thick, add milk, one tablespoon at a time, until desired consistency is reached. Once the cookies are completely cool, spread or pipe the filling onto the flat side of half of the cookies. Top with the remaining cookies to create whoopie pie sandwiches. Dust with powdered sugar, if desired. Enjoy your delicious Gingerbread Whoopie Pies!
