Pumpkin Apple Chowder

Luscious, filling, and flavorful well describe this pumpkin soup. It has apple and onion pieces to add some texture to this warming winter diabetic friendly dish. My #1 recipe taste tester (husband) said, "That actually tastes pretty good." Thanks, honey! He is a cautious taster of new recipes I'm working up so this is high praise indeed. If you're feeling experimental, try substituting a firm pear for the apple. If you would like this soup a little richer, use half and half instead of whole milk. Serve this steaming with crunchy fresh vegetable sticks on the side. 2 T. margarine 1 med. apple, diced with skin on, Pink Lady variety works well
1 med. sweet onion, diced
1 - 29 oz. can pumpkin
3 c.+ milk
1 t. salt
1 t. cumin
1 t. coriander
1 t. chili powder
1 t. garam masala
1 t. turmeric
1 t. fresh ginger, grated fine
1 T. jarred diced garlic
1/4 c. fresh cilantro, chopped using a kitchen scissors to speed to process Saute apples and onion in margarine until onions are caramelized. While that is cooking, pour pumpkin and milk into a large soup pot using a whisk to mix well, begin simmering stirring often. In a small bowl, add salt, cumin, coriander, chili powder, garam masala, and turmeric stirring with a mini whisk to mix the seasonings then add to the pumpkin/milk mixture. Add onion/apple mixture and seasonings to pumpkin/milk soup base stirring all ingredients gently together. Break out your ladle and serve it up!
