One of my fondest memories of Bangalore was waking up on Saturday Sunday morning to make Goan pork spicy sausage with baked beans and potatoes, which absorb the red chili and malt vinegar of the chorizo, get elevated to superstar status. Mop it up with white breakfast bap toasted with Amul butter and downed with a tall shot of Coorg filter coffee. The hot concoction seals off the glorious breakfast. Chicken Malvani Sukka. From the coastal region of western India, comes a chicken dish with lots of warmth and the right amount of spice. Roasted onion and fresh coconut lend a delectable flavor and the spike of curry leaves makes it fragrant. Best had with a side of thinly sliced red onions and chopped fresh coriander. Chapati, traditional wheat rotis made on the griddle or Pav, a breakfast bag local to Bombay are the best accompaniments for this food marvel.
