Balsamic Chicken Kabobs are a tasty and healthy grilled dish made with chicken that has been marinated and sweet onions and bell peppers. With the balsamic marinade, this simple kabob recipe gets a tangy and savory twist.
Ingredients: 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes. 1/4 cup balsamic vinegar. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper to taste. 1 red bell pepper, cut into 1-inch pieces. 1 yellow bell pepper, cut into 1-inch pieces. 1 red onion, cut into 1-inch pieces. 8 wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, combine balsamic vinegar, olive oil, minced garlic, dried oregano, dried basil, salt, and pepper. Mix well to create the marinade. Place the chicken cubes in a zip-top bag or shallow dish. Pour the marinade over the chicken and seal the bag or cover the dish. Refrigerate for at least 1 hour, or ideally, overnight. Preheat your grill to medium-high heat. Thread the marinated chicken, red bell pepper, yellow bell pepper, and red onion alternately onto the soaked wooden skewers. Grill the kabobs for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165F 74C. Remove the kabobs from the grill and let them rest for a few minutes before serving. Serve the Balsamic Chicken Kabobs hot with your choice of sides. Enjoy!
