This roasted carrot everything hummus with pumpkin and peanut butter is a delicious twist on traditional hummus. The roasted carrots add sweetness and depth, while the pumpkin and peanut butter lend creaminess and richness. It's perfect for dipping veggies, pita bread, or crackers, and makes a great snack or appetizer.
Ingredients: 3 large carrots, peeled and chopped. 1/2 cup canned pumpkin puree. 1/4 cup creamy peanut butter. 2 cloves garlic, minced. 2 tablespoons lemon juice. 2 tablespoons olive oil. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. Salt and black pepper to taste. Everything bagel seasoning, for garnish.
Instructions: Preheat the oven to 400F 200C. Toss the chopped carrots with 1 tablespoon of olive oil and spread them on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized. In a food processor, combine the roasted carrots, pumpkin puree, peanut butter, minced garlic, lemon juice, remaining olive oil, ground cumin, smoked paprika, salt, and black pepper. Blend until smooth and creamy, scraping down the sides as needed. Transfer the hummus to a serving bowl and garnish with a sprinkle of everything bagel seasoning. Serve with your favorite veggies, pita bread, or crackers. Enjoy!
