Ingredients: 1 cup cooked wheat berries. 2 cups cooked chicken breast, diced. 1 cup canned artichoke hearts, drained and quartered. 1 cup asparagus spears, blanched and chopped. 1/2 cup creamy goat cheese, crumbled. 1/4 cup fresh basil leaves, chopped. 1/4 cup red onion, finely chopped. 1/4 cup extra-virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: In a large mixing bowl, combine the cooked wheat berries, diced chicken breast, quartered artichoke hearts, chopped asparagus, and crumbled goat cheese.
