Homemade barbeque sauce
Roast chicken with barbeque sauce, double potato wedges, asparagus, and broccoli on Saturday 11 June 2016
We spent the day at Stirling Castle, getting chilled in the even-more-damp-and-dreary-than-is-expected-in-what-passes-for-summer-here conditions. The original plan had been to buy a rotisserie chicken on the way home, but when I could buy a bird for half the price and cook it myself, we opted for Plan B. However, rather than do a more traditional roast, I made a barbeque sauce to accompany the chicken, and we had wedges rather than roast potatoes.
This barbeque sauce recipe is based on that shared with me by my aunt, but, typically, I have fiddled with it. Her sauce is delicious, but I find it very sweet. As well as reducing the sugar and honey content, I add mustard to my sauce, which brings a little more spike to it.
5 tablespoons tomato ketchup
2 tablespoons brown sauce
2 tablespoons honey
1 teaspoon brown sugar
2 teaspoons smoked paprika
1 teaspoon mustard (English or Dijon)
Mix everything in a saucepan over a slow flame until you have a smooth sauce. That’s it.
