Ingredients: 2 lbs ground beef. 1 lb ground pork. 1 cup breadcrumbs. 2 eggs. 1/2 cup milk. 1/4 cup chopped onion. 2 cloves garlic, minced. 1 tsp salt. 1/2 tsp black pepper. 1/2 tsp smoked paprika. 1/4 cup fresh parsley, chopped. 1 lb bacon. 1/2 cup honey. 1/4 cup bourbon. 2 tbsp soy sauce. 1 tbsp Dijon mustard.
Instructions: Set the temperature of your smoker to 225F 107C. Ground beef, ground pork, breadcrumbs, eggs, milk, minced garlic, chopped onion, smoked paprika, salt, and black pepper should all be combined in a big bowl. Blend until thoroughly blended. Shape the mixture of meat into a loaf. Lay bacon strips out both vertically and horizontally, then weave them together to create a bacon weave. After positioning the meatloaf atop the bacon weave, encircle it with bacon. Place the meatloaf wrapped in bacon inside the preheated smoker. Smoke the meatloaf for two to three hours, or until it reaches 160 degrees Fahrenheit 71 degrees Celsius inside. Make the glaze while the meatloaf is smoking. After the meatloaf is cooked through, take it out of the smoker and allow it to stand for ten minutes before slicing.
