These crispy veggie tots are a healthier alternative to traditional tater tots. Packed with cauliflower, broccoli, and carrots, they are baked to perfection in the Air Fryer, making them a guilt-free snack or side dish.
Ingredients: 2 cups of cauliflower florets. 2 cups of broccoli florets. 1/2 cup of grated carrots. 1/4 cup of grated Parmesan cheese. 1/4 cup of whole wheat breadcrumbs. 1/2 teaspoon of garlic powder. 1/2 teaspoon of onion powder. Salt and pepper to taste. Cooking spray.
Instructions: Preheat your Air Fryer to 375F 190C. In a food processor, pulse cauliflower and broccoli until finely chopped. In a large bowl, mix chopped veggies, grated carrots, Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper. Form the mixture into small tots and place them on a parchment-lined tray. Lightly spray the tots with cooking spray to help them crisp up. Place the tots in the Air Fryer basket in a single layer, making sure they don't touch. Cook for 12-15 minutes, flipping halfway through, or until they are golden brown and crispy. Serve hot with your favorite dipping sauce.
