Ingredients: 2 cups shredded green cabbage. 1 cup shredded red cabbage. 2 medium apples, thinly sliced. 1/2 cup grated carrots. 1/4 cup chopped fresh parsley. 1/4 cup mayonnaise. 2 tablespoons Greek yogurt. 1 tablespoon honey. 1 tablespoon apple cider vinegar. Salt and pepper to taste.
Instructions: Shred green and red cabbage, slice apples, grate carrots, and chop fresh parsley. Put all of this in a large bowl. Add the Greek yogurt, honey, and apple cider vinegar to a different small bowl and mix them together using a whisk. Add the dressing to the cabbage and apple mix and toss it around so that everything is covered. Add pepper and salt to taste. Put the coleslaw in the fridge for at least 30 minutes before you serve it so that the flavors can mix. Enjoy! Serve cold.
